Built-in Backups: Backup scopes & restore

Let backup tasks cover only part of a site: DB + core, DB + themes, or DB + plugins.

When I update one or two plugins, I don't necessarily need a full backup including a large media library.

A scoped backup would be faster, smaller, and restore only what the update changed.
